Easy Chinese Chicken and Broccoli

My husband loves Chinese food, and Fat Dragon is one of our favorite date night spots. I’ve been trying to find an easy recipe for our favorite dish, chicken and broccoli, but none of my favorite cooks have posted any lately. So… I decided to search the internet for something simple and delicious. I found the perfect recipe from Simply Whisked.

Simply Whisked says this meal serves four, but I wanted a dish with lots of chicken and broccoli. I doubled the chicken breast, marinating them ahead of time. I also used two bags of frozen broccoli, thawing them according to the directions on the bag. This fed four adults and provided a left-over lunch for two 🙂
For the dish:
  • 4 boneless, skinless chicken breasts, cut into bite-sized pieces
  • 2 bags of frozen broccoli crowns, steamed
  • 1 tablespoon vegetable oil
For the marinade:
  • 2 tablespoons vegetable oil
  • 1 tablespoon water
  • ½ teaspoon baking soda
  • 1 teaspoon sugar
  • 2 teaspoons cornstarch
  • 1 tablespoon reduced-sodium soy sauce
For the sauce:
  • ¼ cup + 1 tablespoon reduced-sodium soy sauce
  • 2 tablespoons brown sugar
  • 4 cloves garlic, minced
  • 2 tablespoons flour
  • 1 tablespoon rice vinegar
  • 1 tablespoon vegetable oil
  • 2 tablespoons water
To make the dish (this took me about 30 minutes)
  1. Mix the marinade ingredients in a small bowl – pour oven chicken.
  2. Marinate the chicken while preparing the sauce and broccoli. Steam broccoli according to the bag’s directions – set aside. In a small bowl, whisk together the sauce ingredients.
  3. In a  large skillet over medium-high heat, heat 1 tablespoon vegetable oil. Add chicken with its marinade and a ¼ cup (about half) of the sauce mixture. Sauté until chicken is golden brown, stirring frequently.
  4. Add remaining sauce and the steamed broccoli. Cook for 2 minutes to thicken sauce or until broccoli is tender, but still crisp.



While it may not be fit for Cinco De Mayo, this easy Chinese chicken and broccoli is the easiest weeknight meal!
